nopot2pin - you asked on the other thread about the recipe for pineapple upside down cake - well here's a picture of it:
And this is the recipe:
Topping:- 2 oz butter
- 2 oz golden granulated (or brown) sugar
The Fruit bit:- 3 slices fresh pineapple, peeled cored and cut into pieces
The cake bit:- 4 oz butter (or marg)
- 4 oz caster sugar
- 2 beaten eggs
- 6 oz SR flour
- a bit of milk
- Grease a dish - either a 7 inch cake dish or, as do as I did as I didn't have one of those, a 7 inch pyrex casserole dish
- cream the butter and sugar for the topping bit together and spread across the bottom of the tin or dish
- arrange the pineapple in pieces on top of the sugar/butter mixture
- Make the cake bit in the usual way (cream the butter and sugar, beat in the egg and fold in the flour, adding enough milk to make a dropping consistency) then put on top of the pineapple, smoothing it out.
- Pop in the oven gas mark 4, 180 F for about 45 minutes
- Remove from oven, allow to cool for about five minutes then put a plate on top of the dish and upend quickly so it ends up upside down.
