  • What a marvellous day MG - maybe things are really starting to turn round for you. If so you have yourself to thank for it for the sheer energy you are putting into sorting your situation out.

    If you want to meet another person who stares lovingly at her "home shop" then you want to call in on Fays Stripey Socks diary - she lives in Orkney and stocks up on trips to the mainland filling her camper van with all the supplies that are cheaper there than on the island! :D

    You know what Scrooge2008 - I think you may be right.

    Time to take stock and set myself some amazing goals instead of settling for this little small life.

    Hope I haven't peaked too soon:rotfl:. I need to remember that this year coming will be a marathon and not a sprint, that more can be achieved by small incremental and permananent changes than huge grand guestures.

    ..................and I'm actually wearing stripy socks this morning so I will take that as a sign and beedle off to have a read of her diary:j

    Well done on the mahoosive shop. Hope the bank plays nicely, it ruddy well should as you are not only willing but also able to pay off this debt (well gradually).

    Can’t face doing the “Master Meal Plan for 2010” just yet. So I am going to do a mini store cupboard challenge for the next couple of weeks using up the stuff that’s in my kitchen just now.

    Any money that I don’t spend on my budget I am going to pay off against the £10k that the bank is chasing. Looks like this could be a long, long DFW diary

    Pulled out my pressure cooker and knocked up a pan of “bottom of the fridge soup”. Chopped up onion, leek, turnip, cabbage and carrot. Up to pressure and cook for 8 minutes, blitz with stick blender, cool and pop into Chinese containers and store in the fridge.

    Had some for lunch today with some HM Granary bread. Just what you need on a cold, frosty day. Saves me putting the heating on I suppose.

    Thinking of the stores I have in – and also that I need to plan a healthy diet for me and the boys I have decided that I am going to dig out my old Slimming World Stuff and follow the plan. I figure that way I can get a wide and varied diet, eat some interesting food to get us out of a rut food wise!!! Added benefit of losing a wee bit of weight too – LOL.

    Actually there is my first goal for 2010. To lose 20lbs to take me back to my pre-baby target – better figure out how to get that in my signature.

    Got five more portions of “bottom of the fridge soup” – all free on the SW plan, but not very filling. So after a rummage in the cupboards I have come up with the following variations.

    1 portion of BOTFS plus 1 mashed potato = tattie soup
    1 portion of BOTFS plus dried green peas = pea n veg
    1 portion of BOTFS plus dried broth mix = scotch broth
    1 portion of BOTFS plus red lentils = lentil soup
    1 portion of BOTFS plus dried barley = beef n barley (oxo cube too)

    All free lunches – but more importantly all FREE lunches as I don’t have to do any shopping.

    I like the idea of cooking a base recipe then throwing something else into it to ring the variations – especially using up stuff from stock to make the pennies stretch further. Every week I have extra from the food budget that is extra money towards paying off the bank.

    Dinner will be Mince with loads of root veg, mashed potato for me and the baby and loads of dumplings for my DS (his absolute favourite but not SW friendly sadly!!!)

    Made in slow cooker, ready to be dished up and stuffed us all. Even better there is two Chinese containers of cooked mince extra ready for the freezer for another couple of dinners.

    Wonder what else is lurking in the freezer??

    Off for an adventure in freezerville…………….
