My other half is currently with EDF for his Gas. He recently received a bill for over a £1,000.00 as he had not received a bill for at least a year. Which they don't seem to care about they are just interested in payment.

This is not a problem in itself, but they reckon he used at least £300's worth during August/Sept. Both of us think this can not be correct as he is living on his own, and the gas is only used for cooking (just once a day) and heating(which was not used at all during these months).

My question is.......does anybody know how we can go about checking that the gas is not being misused by someone else or the name of any 3rd party companies that can check this is correct.

Have you checked the meter readings are actual (not estimated) and match those on your meter?

Do you have reason to suspect the gas meter has developed a fault? If so, you could ask for it to be checked, but the supplier will charge you for this (but will be refunded if the meter does prove to be faulty)

What evidence have you that someone else is using the gas? It would mean someone has tapped into the supply on your side of the meter. Can you see evidence of this?
Simply by keeping a regular check on the meter when you are using no gas would show whether anyone else was consuming your gas.
