Restoring Furniture

Options
Any woodworking experts out there? I've recently been given a 1960's Ercol bench that has been stored in a barn for the past few years. It had been professionally stripped and waxed about 15 years ago, but any residue has been removed during cleaning. Also the wood itself is tinder dry.
My OH has repaired the bench and rubbed down the wood to remove surface dirt and minor scratches.
The problem now is how to treat (rehydrate?) the wood, highlight the grain and protect it from future damage? It will be used in the kitchen so any surface must be able to withstand food spills etc. Also I want to restore it to it's original colour (it looks very bleached at the moment) of pale gold.
Any tips gratefully received!
