yes the hissing is a good way of telling the cat to ........off - its what cats do! if he persists then do what mummy cat would do! a box round the ears!!!!!!!!!!! before you all jump all over me - I am about to suggest with a fake mummy paw, that is a sock with a sock pushed inside to make a gentle club! while hissing fiercely! doesnt have to be DD that does it - specially if cat sees you as MUMMY. this should remind him of kittenhood and make him stop and think he is doing wrong. also, mummy cats will often nip when kits go too far - not suggesting that though! so a gentle swat from you will not hurt as much as his mum did.
Naturally i wouldnt suggest hurting the cat - he is playing, but he has to learn to play gently - so when he does i would suggest you get one of those clicker things and reward him.0
