Oniony milk

Hi OSers!

I'm going to attempt these battered onion rings (thank you ViksB) to go with my cod. I've got homemade wedges in the oven so I guess it's turning into a HM chip shop dinner!

I've got the onion rings soaking in milk but I'm wondering if there is anything I could use the milk for afterwards? I don't tend to make sauces and the only thing I was planning to make that uses milk is soda bread. Oniony soda bread? I'm not sure I can imagine it!

So does anyone have any suggestions?

    Have you got any smoked fish needs cooking? I always put a couple of slices of onion in the milk/water that I poach smoked haddock in.

    I'm sure oniony bread would be great - put some dried onions in too and invent a whole new loaf :D

    I was going to suggest using it for a fish pie sauce. You could freeze it until you need it.

    Freeze it for a couple of weeks and use it to make bread sauce to go with Christmas dinner?

  • You could use it to make a white sauce for a savoury dish? Like a lasagne, you could use it to make the white/cheese sauce, or you could use it for the sauce in a fish pie? I always poach my fish in milk then use the milk to make the sauce to save wasting it. If you don't need to use it immediately you could freeze it but label it VERY carefully!!

    If you chop an onion, add 6 peppercorns, a lump of butter, a bayleaf and a blade of mace and simmer it in the milk for about 20 mins, then strain the milk off into another container. Stir in a couple of ounces of breadcrumbs and some more butter or cream and you have a fantastic bread sauce to have with your chicken or turkey. It doesn't matter if you don't usually make sauces. This is the best. :D

    Thanks for brilliant ideas! Even though I've just eaten I've now got a hankering for poached fish and bread sauce (not together although it could be lovely)!

    I've a big confession.:o I'm a rubbish cook and the onion rings didn't work out right for me. The flour didn't stick so I ended up trying to put more milk on which put loads of seasoned flour (had pepper and harissa in it) in the milk and it went all funny - so I chucked it. Oh the shame! Not very OS and I deserve a big rap on the knuckles. There wasn't much but I hate waste and it won't happen again.

    But I think I will attempt it again so will still get to try out your suggestions. I'm going to relations for Christmas dinner so won't be making bread sauce (and I confess to a slight addiction for M&S's bread sauce) but I like it so much that I might well make some just to have with chicken! And on the smoked fish front, my Mum used to make something called Finnan Haddie for my Dad and I think I might give it a go next time I've got oniony milk going spare.

  • Great idea : Finnan Haddie is lovely, and a good way of using your oniony milk. I would always go for a smoked haddock recipe before anything else (must be my Scottish roots). I make a lovely fish and mash pie by painstakingly taking all the bones out of Arbroath smokies - a bit of hassle but so delicious!!
    I wondered if it would be nice to soak chicken pieces in to make homemade goujons (a bit like the Nigella recipe)??? Not haddock but nice all thesame!

    I had to look up Arbroath smokies, they sound delicious! You are more dedicated than I would be picking out all the bones! :D But the end result must be amazing!
    Homemade chicken goujons sound nice too but I've got an appetite for smoked fish now! I won't be buying it till after Christmas as I'm challenging myself to dine on my freezer and store cupboard till then but I'll make a mental note of it. Smoked fish and mash (the oniony milk would go nicely in the mash too, I could make champ out of it) just sounds like a perfect winter warmer.

  • Mmmm - I want some smoked fish too now, smoked haddock is easier than Arbroath smokies for fish 'n mash pie, and just as nice. Cheese and a bit of wholegrain mustard is lovely too, but it is perfect on its own. Our kids love haddock dishes too - they actually insist on haddock if we get a chippy tea!!!
    Actually I often get DH to get the bones out of the smokies - suits his 'picky nature' lol :rotfl: (just joking - honestly!)
