A lot of mince this week to keep costs down. We all love it so it doesn't bother us and you can make each meal taste so different.Debt free wannabe

SUN- BH will be doing a lovely Beef Joint. I've not asked what his plans are for what will be going with it - but there are Yorkie Pud Batters, lots of Veg & Potatoes, plus some 'bits' available so I'm sure it will be delicious!
MON- Sunday's leftovers ;-)
TUE- Grilled Sausage / Garlicy Mustard Mashed Potatoes / Veg / Onion Gravy
WED- Battered Haddock Fillets (not HM) / Chips / Veg
THU- Chicken Fajitas with Salad Toppings
FRI- Grilled Pork Chops / Herbed New Potatoes / Veg
SAT- Out or Takeaway0 -

It really does start getting complicated now:
This week we are having/had:
Thurs: I didn't eat! was feeling sick and went to bed. OH did himself an omlette.
Fri: Meeting a friend for cheap and cheerful tea / OH is going out too.
Sat: First dinner party of the season (I'm cooking); Starter Selection of Anti-pasti - cheese, meats, jarred veg(mostly from stores), salad and foccaccia; Main Chicken Cacciatore, roast pots with onions, italian braised savoy cabbage; Pud lemon cream pots with raspberry sauce.
Sun: Eat at OH's parents
Mon: Pasta and Something (OH going out and I've got a meeting, so just me!)
Tues: Cajun Tuna Steaks with Prawn Skewers, Jacket Pot, veg or salad
Wed: Either Roast Beef or Roast Chicken

I can't believe how much easier life is when I mealplan! I stuck to my plan 100% last week ... here's this weeks:
Sat: Chinese pork strips with wedges and peas (thanks Ariana for recipe!)
Sun: Special fried rice with chicken scraps- does this need to go with something???
Mon: Pumpkin muffins and puy lentils
Tues: Lamb chops and veg
Weds: Lasagne and GB
Thurs: slow cooked pork and onion scraps from freezer with mash
Fri: On the road from lunchtime - 7 hour journey so going to pack, muffins, cheese and onion pasties (hopefully - inspired by post earlier in week!), ham baguette (if H's HM ham turns out ok), fruit and water. NO Stopping at services for anything other than wees and petrol
Sat : being fed by someone else = yay!!!!!
Sun: on road back again - hopefully with a load of scraps!

ETA: Just done a cheese, onion and potato pasty experiment and they are fantastic (if I do say so myself!) I'm amazed and will be making them for all our festive journeys - yum!Bon App's Scraps!MFb40 # 130 -
Feta, olive and thyme muffins
Makes 10 using Lakeland muffin tray.
9 oz plain flour
3 teaspoons baking powder
1/2 teaspoon salt or onion salt
1 teaspoon sugar
packet of feta cheese, crumbled
12 olives, chopped
2 teaspoons dried thyme*
1 egg
8 fl oz milk
3 fl oz vegetable oil
1. Mix together the dry ingedients.
2. In another bowl, beat together the eggs, milk and oil.
3. Stir the wet ingredients into the dry. The batter will be lumpy but no dry flour should be visibile.
4. Half fill muffin trays or tins. Bake for 25 minutes at 200 C until browned.
* This seems a lot but I keep herbs for a long time and they lose their flavour over time.
These freeze well.
A nice variation on this is to use grated strong cheddar instead of the feta and add any of the following (instead of the olives and thyme)- finely chopped celery, red/green peppers, carrot, sun dried tomatoes, onion or spring onion, use mixed herbs or marigold stock powder for flavouring.0 -

ho hum, meal plans skipped a week, but trying again.
Saturday - pizza night
Sunday - pork chops with apple and cheese
Monday - hm lasagne and garlic bread.
Tuesday - prob lasagne again.
Wednesday - burger and chips
Thursday - curry
Friday - curry
Saturday - pizza night
