Saw Ina Garten make a nice spread the other day.
She whisked up a tub of soft cheese, salt and pepper, and then added chopped spring onions. Spread on two pieces of bread with a slice of turkey ham in-between.
Tried it using low fat cream cheese, and added mustard and 1 cheese triangle. I'd never have thought of whisking cream cheese to incorporate other ingredients evenly, but the possibilities are many, I'd imagine, and freeze well.
Would probably work with Quark as well.0 -
I've been on a lifestyle changing regime for over a year and finding tasty ideas to go on crispbreads/open sandwiches has been a bit difficult.
I know that Low Fat Cottage Cheese is particularly good for me - but it's so darn bland and uninteresting...............
My way is to drain off the liquid that it contains, mix with a small amount of grated Extra Mature Low-Fat Cheddar, then add some finely chopped spring onions and season with a little black pepper. Goes very well with some freshly chopped coriander too.

I mash corned beef with a dollop of ketchup or brown sauce to make it spreadable, depending on whos eating the sandwiches!RIP Iain

I have loads of smartprice smoked salmon which doesn't look great (DD1 turning her nose up cos of the look!!), do you think it'd work if I tried whizzing some up with cream cheese? What could I add to liven it up a bit? I bought 8 packets of it when they were whoopsied and have them lurking in the freezer annoying me!Father Ted: Now concentrate this time, Dougal. These

I would whizz up the salmon with a bit of red onion, some philly (well the cheaper version) and just a few capers
or I would whizz up with Philly and dill or chives and a little lemon juice
things that go well with cream cheese and salmon are
capers, dill, chives, so all of these would taste nice in any kind of quantity if you have them. I have made it without capers when we ran out and it still tasted lovely

I had a smoked salmon 'pate' that sainsburys were doing on a food-truck cooking tour thing a few months ago - they served it on little crackers and it was gorgeous. The smoked salmon was blitzed with cream cheese exactly as suggested above so personally I'd probably do that! Chives would be nice in that if you happen to have themOn the up

some good ideas here because as well as salmon, dads giving me a jar of mayonaise nearly every week, i have about 5 jars of mayo stored in kitchen unopened , so i thought ok , kitchen can get a bit warm, when open 2nd jar of mayo , tasted a bit off , the last couple of weeks when hes given them me gone straight to fridge unopened, still got 4 unopened in kitchen cupboard might have to throw these if they taste off..... did that make any sense?0

Just jumped up thinking I would make a sandwich spread from my Australia Day leftovers and had a lightbulb moment :@)
So I mixed together the following -
3 thick slices of roast pork
2 mushrooms
1/2 pepper
1 1/2 onion ( small)
1/4 carrot
1 tbsp bbq sauce
1 tbsp tomato ketchup
S & P
Blitzed in the food processor and made 8 large sausage rolls in puff pastry and enough filling to make another 8 safely placed in the freezer.

Whenever we have a roast chicken dinner I make sure I keep behind a tbsp of stuffing and a small pile of the meat itself. I chop them both finely and add enough mayonnaise to make a paste. The mayonnaise helps to bring everything together, the stuffing gives a nice herby taste and the meat gives the sandwich a bit of body. I also do the same with a finely chopped rasher of cooked bacon if there is no stuffing handy. It makes enough for us both to have in sandwiches for at least one day.
I have successfully substituted the chicken for a chopped cooked sausage too.
The smoked salmon and cream cheese one sounds absolutely lovely. Perfect for a bagel. I'll have to give it a try.
