  • This site has some interesting ideas.... I have a meat-loving DH who has a packed lunch every day, so I'm desperate for new ideas, too!

I have made a corned beef type one by mashing up corned beef with skinned tomato and chopped onion.

Thinking of tomato reminds me of my fave sarnies as a child, my mum would mash up some nearly hard boiled eggs with skinned tomatoes and it was absolutely fab, better than slices of egg and tomatoes as this made a sort of spread and the tomatoes didn't make the bread soggy.
  • I am looking for recipes for chicken tikka sandwich spread - OH loves the tubs but they are so expensive and trying to make it an economical option for work lunches.

At the moment he takes 2 or 3 rounds of ham pickle sandwiches which must get a bit boring for him.

That's exactly what I was going to say. My Mum used to make that when we were kids, going to Groomsport . I think she used to call it ? Maybe thats a Norhtern Irish name, i dunno :rotfl:

I think it was corned beef, boiled tomatoes mashed up, onions and i think maybe salad cream, but I have just text her to ask her. She will love that :D Black pepper too, not had it for years.

Edit - no , no salad cream. The tomatoes bind it.

  • Boiled tomatoes? My mother used to make corned beef and tomato sandwiches whenever we left the house for a day-trip or a long journey but she blanched the tomatoes so they could be peeled easily, then mashed up the toms into the corned beef. I haven't eaten one of those sandwiches in decades but I can still remember how good they tasted.

Yip boiled! I checked with her. I can still remember too. I might have to buy some corned beef for nostalgia sake and make it! I wonder if it is still as nice.

My mum replied, and then insisted on telling me how fattening corned beef is. I said I dont care!:rotfl:

Sorry another veggie suggestion but I have found that re-fried beans work really well as a sandwich paste as long as you mash them well :)
