Microwave Cake help needed! Plus Easy microwave meatballs recipe.

Hello i'm hoping one of you lovely people will help. I am having people over for dinner yesterday but have been a bit under the weather and so i want stress free easy cooking. I've just bought a microwave and so would like to use it to bake a cake for pudding. Does anyone have a good microwave cake recipe that they've tried and tested?

In exchange here is my microwave meatball recipe that i used earlier and can honestly say they came out well .

250g Mince
1/2 cup of breadcrumbs
1/2 cup of passata or tomato puree with a little water or ketchup
1 egg
1tsp salt
1tsp pepper
1 onion

Combine first 4 ingredients until thoroughly mixed then add the remaining ingriediants. Form into small balls place on a microwavable plate and cook on medium (80% on mine) for 8-10 mins.

This is the basic recipe, i added dried herbs, cumin and coriander and Garlic, but that's my personal preference.

    Any Victoria sponge mix works well in the microwave.
    You could turn in into a jam pudding or treacle pudding by putting a spoon full or two in the bottom of a greased basin, Victoria sponge mix, cover with cling film and cook for three minutes max. Served with custard, yummy.

    Victoria sponge is equal SR flour, butter, sugar plus eggs. I use two eggs to 6oz flour, 6oz butter, 6oz sugar. beat butter and sugar till light and fluffy, beat in eggs, stir in SR flour.

    Prepare your 'tins'. Except they aren't , cos you don't put metal tins in the micro. I have some shallow plastic cake 'tins'. The original instructions said to line with kitchen roll cut to size. Sounds weird, but I do this and it works.

    6 1/2 oz/190g plain flour
    2 tbsp cocoa powder
    1 tsp bicarbonate of soda
    1 tsp baking powder

    Sieve the above together well.

    5oz/150g caster sugar (I use granulated)
    2 tbsp golden syrup
    2 eggs beaten
    1/4pt/150ml sunflower oil
    1/4pt/150ml milk

    Mix together the above and then mix in the dry ingredient mix. Divide the mixture between the prepared tins. You can use a deeper one or three shallow ones and just alter the cooking time a bit. Be careful not to overcook!

    Cook the cakes one at a time on full power (well, when I started using this recipe my micro was 650W, so that is what I use. That is less than full power on modern machines). WHen you take it out, leave it for about thre minutes, turn out and wrap in clingfilm and leave on a wire rack until cool. If I divide mix into three 'tins' then I do them for 3 1/2 mins.

    I sandwich these together with the sour cream icing from Delia Smith book of cakes. I think that goes 5oz chocolate of preference and 1/4 pt sour cream. break chocolate and put in basin over hot but not boiling water, being careful not to get any water in the mix. WHen the two are nicely mixed together take it off the heat. When it's thick enough to spread, sandwich the cakes together.

    if you're careful not to overcook the cake this is a nice soft quite gateau-y type of cake for a pud. Serve with some cream or icecream.

    You could do butter icing if you prefer.
