Yes if you definitely want the quidco cashback you'll have to do it that way.
Also it shouldn't be a problem with you if you're exchanging and completing on the same day but for anyone else looking, when you are buying insurance for your new house:
-make sure they put down your current address for all correspondence, not the new address
-if you have more than 30 days between E & C, you might run into problems as some insurers will say you can't be out of the property for more than 30 days in a row. it's probably a good idea to point out specifically that this insurance is for a house you haven't actually bought yet, just exchanged.0 -

Thanks again for the helpful advice.
I must say though, I just realised I forgot to mention I'm in Scotland :-) That'd be why there's the confusion over not having taken out insurance much earlier, lol. I've found out that in Scotland you arrange insurance for the date of entry. But as I won't know the date of entry till last minute, I think it'd make sense (as many of you have said) to take out the insurance now and worst case I'll be paying for a few days I don't need. Better than having a period of not being insured.
As for the address to put down, I figure my correspondence address should be my new address as I'll probably be in it by the time anything arrives.
