What to do with my Food in Stock

Heres all the Food in my House
and want to make some good Meals with it.
Can anyone give me some Ideas. I know what I can do with the Jars of Sauces.
Also i have some potatoes in the Fridge which need to be used, can anyone think of something that I could make with them & maybe freeze for another day with what I have.
Need to make space in the Freezer too so I can load it up with Meats.
Just curious to what Pro's would come up with, bearing in mind, its only for me, and then maybe I will buy more Versatile foods when the Cupboards are bare.
Also looking to attempt making a Risotto this week, any tips. Can you use regular Rice, as im not sure what i have at home. the rice you can have with curry etc

For proper italian risotto you should use risotto rice. I use the sainsburies one, which is quite a bit cheaper than the best brands like canaroli.
Of course you can make lots of rice dishes with basmati or easy cook rice, but it won't be a proper risotto.0 -
risotto is best made with arborio or carnarolli rice (not sure on spellings
)
However, long grain or 'normal' rice makes a nice pilaf. I often make a chicken pilaf from a recipe in good food magazine many years ago. I don't have the xact recipe - i make it up a bit nowadays - basically brown a chicken breast with some tumeric in a frying pan with half a sliced onion. Transfer to an oven proof dish with a lid (or use some foil as a lid). Add some sultanas and a mugful of rice and a half pint of chicken stock. Cook until all stock absorbed and rice cooked. serve with green veg.

What a great idea, I might have to do this when I get home!
Firstly how long does this need to feed you for?
The option of lasagne with cheese sauce, mince and tomato sauce,
a nice chilli with beans and mince,
sausage and bean hotpot with cauliflowe and brocolli
you could cook the chicken with one of the sauce in a jar and make a curry or similar served with rice and mixed veg thrown in?

theres no length to how long it has to feed me for. I got these things when I moved it, obviously starting from scratch and had no idea on how much bfhry was suitable for myself. Anyway I set myself a monthly budget of £100 to start with. So far i have spent £27this month which is in my signature. and thought Id try and use lots of things I already have this month before doing a Big Shop. I find myself wandering into the local co-op every other day picking things up.0

If you have disposal boxes, I'd use the mince (part cooked and then cooled) and some of the spuds to make a cottage pie. All you have to do is whack it in the oven after defrosting.
Throw some veggies in with some cooked pasta for cold salad lunches - just add a bit of dressing and you're away.
I've got to do this in June too - I realised that I can't honestly claim 'I've got nothing in' and get a takeaway. Again.Some days, it's just not worth chewing through the leather straps....

Any pasta dish like pasta bakes and lasagna freeze really well too (if it lasts long enough to make it to the freezer... mine never does and and I make a huge portion and there are only 2 of us!)
