Using up sultanas and flaked almonds in Baking

Im making a prawn thai curry this week so ill throw some almonds in.

I have a recipe for granola that is fab, & I usually use up whatever nuts or dried fruit I have to hand.
(Note - I can't remember where I got the recipe from, it may have been on MSE, apologies if I have stolen your recipe
)
4 cups oats (you can replace 1 cup with 1 cup of wheatgerm)
1 cup sunflower seeds
1 cup desiccated coconut
1 cup chopped nuts or pumpkin seeds (or use extra sunflower seeds and coconut)
2 tsp mixed spice or cinnamon
Put in a large baking tin/dish
combine
1/2 cup honey or syrup or brown sugar
1/2 cup vegetable oil
Pour over dry ingredients, mix well and bake at 150c for 30-60 mins, stirring frequently.
Don't let it get too brown. Allow to cool.
Stir in, as desired
raisins
dried apricots
dates
sultanas
Store in an airtight container.0 -
I always think that flaked almonds look nice on top of a bakewell tart. I don't know if you could work that into your plan. we put sultanas and spices in with long grain rice and also put them in porridge0

Don't worry about the best before date, dried fruit and flaked almonds will last ages after this and still taste fine (the fruit and almonds I use in my christmas cake is usually several months out of date!)0
