That sounds a bit like one I make from BBC's good food here. I often use HM chicken stock if I've got it for added flavour. I usually add coconut milk to mine, and extra spices.
Thanks Sublime, that sounds really yummy - will try adding milk next time.
I have only just started trying to make soup since becoming OS MSE in September and have no idea really so I am amazed how close my 'recipe' was to yours! :rotfl:
Thanks again

no question is a silly question norman. but, if you used very thin skinned carrots - no need to peel - but, if the carrots are a little (or a lot) past their youth then peel them by all means - or simmer a bit longer. I dont mind peeling them as the peelings go for compost - so nothing is wasted anyway!0

Thanks for the peeling advice x

I put the tops, tails and peelings in my bag in the freezer that has bits and pieces for stock. WHen the bag is full or when I get bones/carcase, then I make stock, Onion skins, celery root etc go in, any iffy tomatoes or whatever.[SIZE=-1]"Knowledge is knowing that a tomato is a fruit. Hi,
I made a lovely carrot soup this week using home-made chicken stock from Sunday's roast chicken carcass. I use a couple of onions, a stick of celery, a potato, a tspn of ground coriander, and then about a pound of carrots as we seemed to have so many left from Christmas. I used chicken stock as the liquid, then blitzed the whole lot up in the liquidiser and I have to say I liked it better than when I use vegetable stock so I'll be using chicken stock again x2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever
