Hi norman,
Chicken stock is perfect for carrot soup, I use chicken stock in almost all my soups unless I've got some gammon stock on the go.
Rather than just boil the carrots in the stock I would chop an onion and the carrots, and sweat them in a little butter (cook gently over a low heat for about 20 minutes - half an hour) then add in the lentils, seasoning and the stock and simmer until they are cooked. Sweating the vegetables really seems to bring out their flavour.

(You obviously have to be careful not to stick it in the freezer then inadvertently serve it up weeks later to your veggie mate...but apart from that...)
Or stick the stock in the freezer without labelling it properly and lift it out thinking it's stewed apples to make an apple pie.0 -

Same as above - I've never made a soup without chicken stock as the base!! It tastes great and adds nutrition to the soup I reckon.0

but nippers didn't want any

Feel a bit stupid for asking the question now as it seems to be pretty obvious to everyone else BUT I am still really pleased I managed to 'invent' and make a soup all by myself :rotfl:

No such thing as a silly question. It was only obvious to us because we knew. You didn't so you asked...now lots of other people who read this will know too :T0
