If it is informal I generally use "Good morning/afternoon" etc and sign off "Kind regards,". I seem to be doing okay with responses from that. I even quite often use that in an e-mail and attach a cover letter/C.V which are (obv) more formally written.0

It's not sexist - its the proper way to adress a letter to a business
