    If it is informal I generally use "Good morning/afternoon" etc and sign off "Kind regards,". I seem to be doing okay with responses from that. I even quite often use that in an e-mail and attach a cover letter/C.V which are (obv) more formally written.
  • Dear Sirs is really sexist though (and highly likely there will be females I am contacting)

    It's not sexist - its the proper way to adress a letter to a business

    If you know the person's name then you should the letter (or in this case the email) for the attention of the person.
