Yep, should be easily doable for that
300 pounds spending money will go a *long* way in Krakow - my advice is to go on http://www.inyourpocket.com and read the guides for Krakow. Generally speaking, the idea is to avoid anywhere for food and drink that's either on the Rynek there or just next to it - go a little bit further afield (but not far, let's say 2-3 streets away?) and you can often find twice the quality at half the price.
Krakow is also set up well for the newbie traveller - English is widely spoken, so you won't have any problems there. It's also got a lot to offer - from the macabre in Auschwitz to the beautiful in the Wawel Castle
It's a very safe city too - certainly safer than Paris or Madrid!
Certainly, I'd recommend it well over any Western European destination

I'm sold! Husband is fascinated with WWII, and I hadn't realised Auschwitz was so easily accessible from Krakow. I'm sure he will be really excited to go.

It's really worthwhile - Auschwitz is an easy daytrip, and it'll leave you plenty of time to enjoy the rest of the day too. There's quite a bit about WW2 in and around Krakow - your husband will be utterly spoilt!Is it best to book flights early or look for last minute deals?
Book them as soon as possible if you're happy with the price - Easyjet isn't really known for huge sales, so if you can secure flights for 100 pounds or so return, definitely do so. Generally speaking, the earlier, the better - and the safest
Also make sure to get good travel insurance (I'm not an expert on this, so can't advise - but I think there's a forum on here about it?) - things can go wrong, and being prepared will help considerably. Don't book any insurance that Easyjet (or any airline) offer you however - shopping around is certainly the way forward
For accomodation, http://www.hostelworld.com is fantastic - the rule with that site is only to trust hostels with a large amount of reviews and with a high percentage score.And thanks PolishBigSpender for the 'inyourpocket' link, looks like a great site!

OP. don't want to throw water on the fire as it were, but do you have passports already? No worries ailuro2, the fire is still going! He has his passport. Unfortunately I need to change the name on my passport, because I've had it since before we were married, and that costs the same as getting a new one! But that's not coming out of the holiday money. Thanks for the heads up though.0
