ideas for homemade pickles

I'm planning on making homemade pickles as a christmas present for my Grandad. The jars I'm going to use are quite small, so a pickled egg wouldn't fit.
So far i've thought of:
Pickled onions,
Pickled red cabbage,
Pickled beetroot (though if someone could give me instructions for that i'd appreciate it)
What other vegetables do you think i could pickle?

My Grandad is diabetic and we suspect he consumes more sugar than he should anyway, so I'm trying to make stuff without sugar.
I have thought about trying piccalli and leaving the sugar out of it but not sure if it would work?0 -
I pickled some chillis the other week. I wasn't sure whether it would work, but Iw as doing onions anyway and chillis were on offer in Morrisons so I thought I'd give it a go. They look quite pretty in the jar.
I'm also told you can pickle garlic cloves with interesting results.0 -

At home I have a recipe for a 'Branston' type pickle - it tastes just like it but doesn't contain any sugar like shop bought! When I get home I will find it out and post the recipe.Mortgage Free x 1 03.11.2012 - House rented out Feb 2016

hmmm, i can just see my Grandad trying to eat pickled garlic and getting quite a shock.....lol
Thank for the recipes Pink, i have onion and cabbage in my delia book but wasn't sure whether i needed to pre cook beetroot or not but now i know!0 -

Hi All
Just got home and here is the recipe...this was published a few years ago when there was a rumour that they were going to stop making Branston Pickle.
Cube 250g of carrots, a medium swede and finely chop 4 cloves of garlic together with 125g dates and a medium cauliflower.
Chop 2 onions, two apples, 2 unpeeled courgettes and 15 sweet gerkins.
Add chopped ingredients to a pan with 60ml of lemon juice, 250ml of cider vinegar, 1 tblsp worcestershire sauce, 2 tsps mustard seeds2 tblsps of ground all spice and 1 tsp of cayenne pepper.
Bring the pan to the boil and simmer for between 1 1/2 and 2 hours to when the swede is cooked through.
Spoon into warm sterilised jars and seal. Leave for 3 weeks until the flavours mature.
Its not as dark as Branston - but it really does smell and taste like it.

i saw this thread and for some reason this came to mind! pickled walnuts! you pickle them in the shell apparently and they were popular yonks ago!0

My OH has just gotten into pickling as well and he has sucessfully done cucumber and mushrooms. :j0
