This is the month where I really could do with saving some money on my food bills etc so I will do a list of most of my ingredients that are lurking in the cupboards and hope you can all come up with some fab suggestions for me on how to use them
Flank steaks (fair amount of... multi buy from costco)
Minced beef (again costco)
Chicken breasts (part boned, completed the boning myself and used the bones for stock for the dog again costco buy)
Prawns (a fair amount! Got them on bogof and then forgot I had them!)
Potato's
Rice
lentils
couscous
tinned tomatos (LOADS!)
pasta
Most of my fresh oganic veg will be chopped up and frozen.
OK let's face it I probably have enough to feed a small army in my mini kitchen but I am feeling uninspired and need help!

Loads of spag bol with the mince and tinned toms. pad it out with lentils. My family think it tastes even better that way. Use the chicken or prawns or both with the rice to do some kind of paella or gumbo. Not sure of a recipe but I usually find what I,m looking for at www.bbc.co.uk/food
Good luck0 -
Defrost prawns using hot water with a little salt added. stir fry some veg such as carrots, onions, celery and some herbs and/or lemon add some coucous (check quantities on pack) and water set aside. Once coucous is ready mix through the prawns. Quick, easy delicious.
Check out the recipes thread, lots of cheap and easy meals.Recipes thread"A banker is a fellow who lends you his umbrella when the sun is shining, but wants it back the minute it begins to rain." Mark Twain0 -

Actually chicken curry sounds like a good plan... hadn't thought of that! Casseroles are easy I know but I always think of them more as a winter food... maybe I should rethink that.
Shepherds pie is another good idea I hadn't thought about...
Prawns and couscous... hmmmm might give that one a try too
Tonight is omelette night I think as I have a fair few eggs to use up, last night was pasta with veggie sauce (very nice). I did do a lot of chopping up of my organic veg though so I now have loads of frozen ready chopped onion, leek and garlic. Tonight I'll try to find room for some more chopped carrotsWhy or why won't the OH recognise that I need room in his shed for a chest freezer!!!!

I make a lentil and tomato soup - with tinned tomatoes - I start off with some onion, garlic, celery and chopped carrots, throw in the lentils and toms and a few herbs. It's one of the families favorite soups.
and.... Green Thai Curry is nice made with Prawns, you would need to buy some paste though if you don't have it (or make an ordinary curry)
