Hi
I made a malt loaf using the Panasonic bread maker and their recipe but it wasn't at all like that squidgy malt loaf I remember eating, the small square loaves that came wrapped in wax paper.
Has anyone got a recipe that gets nearer to this. Mine turned out to be an ordinary loaf that tasted mildly of malt, perfectly good but not what I was aiming for.

Did you eat the malt loaf the same day you made it? I find it needs to be left a day and then it becomes more sticky and chewy. I don't do mine in a breadmaker, because it's easy peasy without.
75ml hot tea
8 tbsp (about 200g) malt extract
175g/6oz self-raising flour
1/2 tsp mixed spice
150g / 6oz mixed fruit
1 beaten egg
1/2 tsp mixed spice
Mix malt extract and tea and allow to cool.
Mix all dry ingredients together, pour in the egg and malty tea, mix it up and pour into a lined 2lb loaf tin. Bake for 1 1/4 - 1 1/2 hours at 140c
Beware your house will smell like the local maltings for a day or so and you really do have to resist temptation and not eat it until the next day.Mortgage

Many thanks for the recipe, no wonder the Panasonic recipe didn't get anywhere near, one tbsp malt and 20g of fruit. I'm going to experiment with your recipe tomorrow and will do my very best to leave it for a day. although your reply did give me an excuse to try a slice of my yesterday's loaf, no - not even remotely sticky

Ooops, sorry I edited to add it is a 2lb tin I use, but it doesn't come up particularly deep and doesn't rise much, maybe you could get away with a smaller one.Mortgage

Wessex Mill do a Malt loaf flour that is good - not quite as squigy but still good.0
