Which credit card should i go for

Hi all,
I am new to the credit card world and do not have a clue what certain things. I do however understand having received Martins newsletters for sometime now that purchasing things like flights, holidays etc offers far more protection etc.
Im taking the kids to florida next year and i would like to purchase the flights in one go and then pay the credit card bill off each month. I already have the money for the flights but if im right in saying, by paying just the monthly amount i receive rewards or something?
:TMy question is this, what card do i best go for, American Express is out of the question because the airline does not except it.:T
