Typically I haven't tried making either dish before
For the lentil and sage loaf, I plan to mix cooked green lentils with breadcrumbs and herbs and bake (will be looking for recipes to base quantities on). For the butternut flan, I plan to roast and mash the butternut then mix it with a thick nutmeggy bechemal-style sauce to put into a pastry case and bake for a little while to set in into the pastry a bit.

Monday - Carrot and Corriander soup, Lamb Curry with rice, Chappattis
Tuesday -Mince pie and cheese crust chilli potatoe crocquets and veg, sticky toffee pud & cust
Wednesday- Spicy meatballs and spagetti, forest fruit crumble with ice cream
Thursday- Lentil and hock soup, Hot dogs, Fudge cake
Friday - Fish & chips peas and bread, Biscuits
No snacking for me and special k for breakfast sandwich or wrap for lunch hubby has yogurts and sandwich for lunchMaria0 -

Ahem. (Clears throat.) Now I've got that out of my system:
Friday - bacon, bean and potato layer bake (my adaptation of a recipe someone (SanFran, possibly) posted on the Storecupboard Challenge thread (I really must learn to keep a note of who I'm borrowing ideas from - it makes it much easier to say thank you!))
Saturday - savoury mince with either dumplings or cobbler topping (depending which I fancy) and veggies
Sunday - bacon, ricotta and spaghetti squash pasta bake
Monday - meatballs on spaghetti squash with garlic bread
Tuesday - ham & cheese bakes (ready made thingies from the freezer) with roast tomatoes and parsnip mash
Wednesday - chilli beans on cheesy toast
Thursday - smoked salmon, scrambled eggs and potato cakes
Breakfasts are the usual (cereal, porridge or hm bread) and lunches will be sandwiches and hm soup (possibly carrot and lentil - I'll see what I've got when I go to make it)

I've been a bit useless at planning lately so I'm back on board!
Sat - fajitas
Sun - stew and dumplings
Mon - meatballs (quorn ones for me), spaghetti and parmesan cheese
Tues - OH playing footy so just something on toast for him, jacket potato with spring onion, tomato and cheese filling
Weds - fish kebabs (tuna steak for me), corn on the cob and baked potatoes
Thurs - curry/chilli from freezer for OH, something quick for me as I'm at SW
That's it for next week...
Lunches will be sandwiches and fruit for OH, HM soup, pasta salad or leftovers for me with fruit0 -
sat - spinach and ricotta canneloni (trying not to have takeaway, ah the urge is very strong!)
sun - quorn pie, mash and veg
mon - quiche, potato wedges, salad
tues - chickpea curry
wed - squash and bean casserole with garlic bread
thurs- creamy tomato pasta bake
fri - too far away to think about

Sat: my big cooking day. Am making a traditional steak (without either kidneys or mushrooms as I'm the only one who likes them) pudding. To be served with mashed potatoes (testing new potato ricer) and carrots.
Sun: I think there will be more beef than I need for the pudding. I will cook it to be served with baked potatoes on Monday. Sunday itself we're having risotto with roasted chicken thighs [reminder to self: need to get some mozzarella, because ...]
Monday: the leftover risotto will be recycled as suppli, to be served as a first course with some salad, then steamed puddings (lemon curd) and custard (probably NOT home made)
Tuesday: I don't finish teaching till 5, so will be late home. Defrosted minestrone soup with some leftover chicken from Sunday added for the meateaters served with cheese on toast.
Wednesday: OH's day off and so his day to cook. He thinks it will be duck breasts in an orange sauce. Veg? Who knows.
Thursday: the meal I was planning last week and didn't happen. Quiche lorraine (a leek & cheese version for dd) with some sweetcorn.

Well I am trying a low carb way of eating at the moment. So far I have noticed a major difference with cutting out the bread etc but am starting to lack inspiration in the menu planning. And meals have to be suitable for those of the family who are still eating 'normally'
So I thought I would post on here to gain lost inspiration and help me stick to meal planning (I lack motivation too)
Saturday:- Eating at parents. Pick nick style with lots of meat and salad.
Sunday :-Home made chicken soup (with bread for OH and kids)
Monday:- Eating at parents. We always do on a Monday. Probably fish and veggies.
Tuesday:-Shepherds pie topped with mashed cauli cheese.
Wednesday:- Fish in butter sauce with veggies or at parents.
Thursday:- Fry up day!!
Friday:- Eating at parents AGAIN (We normally only do this on a monday and Friday) Will have either chippy tea (fish no batter) or ham salad.
Breakfasts are either porridge (twice a week) sausages, mozzerella and tomato salad etc,Cereal for the kids and hubby or toast. plus fruit.
Lunches are sandwhiches with fruit and crisps for the hubby, Kids eat at the childminders and I will grab a salad or homemade squash or chicken soup from the freezer before work.
Snacks are cakes, cheese, fruit or yoghurts for the rest of the family. I tend to have cheese or nuts etc.
That's it for next week. Now all I have to do is stick to it!!0 -
