Pasta

I am thinking of making a 'batch' of bolognese to freeze down,
can I cook the spaghetti and freeze it so able to 'nuke'

  • I would just freeze the sauce in individual portions.

    If you cook and freeze the spaghetti as well not only will it take up a lot more freezer room but also when it is defrosted and reheated the texture won't be as good. I think it will go a bit soggy.

    Dried pasta only takes 10 to 15 minutes to cook from scratch, including getting the cooking water boiling, so it's not really even labour-saving to freeze it. I usually boil the water in the kettle as it seems to heat up a bit faster than in a pan on the stove.

    I too usually just freeze the sauce but have frozen the spagetti with it before and its been fine if it was mixed in with the sauce ,tried seperately and it didnt really work :/

    unfortunately it is for when I am working away and stopping in my caravan,so no real chance to use the boiling ring as other bits on top,

    can I cook it from 'fresh' in the micro?

    If not I will try freezing it with the sauce probably easier

    Apparently you can cook spag in a thermos ,never tried it tho ..

    I find pasta shapes freeze better than spaghetti, as they get less mushy when defrosted. So try some nice chunky twirly shapes instead. And it definately works better to mix the pasta and sauce together before freezing as it saves on the twin perils of crunchy dry pasta edges and mushy bottom pasta.

    Just give it a good stir up half-way through nuking it.

  • I freeze pasta shapes with pasta sauce and it turns out fine. Just make sure you mix well before freezing. Never tried spaghetti though. I've also frozen pasta shapes on their own before, but they can be a be dry when defrosted. You may want to add a little oil to them once cooked, before they cool, it seems to make then defrost better then.

  • Or why not make a lasagne to freeze instead?

    You can make the same meat sauce as for spaghetti. Cook the lasagne as per the packet instructions, layer the lasagne and sauce in a dish and top with some cheese sauce. Bake in the oven and when cool cut into portions and freeze in lidded microwaveable trays.

    This may need the stop-start method if you are microwaving it from frozen because it can be a bit dense in the middle and you don't want it to be still frozen in the middle and molten on top!

    I think this is the same principal as my tupperware thermos bowl, I put the dried pasta in the bowl cover with boiling water and leave for 10-12 minutes and its always cooked perfectly. I think if you put the spaghetti in a thermos (maybe broken in half to fit) cover with boiling water and then put the lid on, it should cook the same. You would have to try timings, maybe 6-7 minutes for spaghetti:confused:

    do they still sell the tupperware thermos bowl,as that sounds like a good thing for me

    Aha, well tupperware is very BIG in my neck of the woods in Germany, This link for thr UK shows the 'insulated multi server' as it's called in 'Blighty'

    No idea on price over there though ( I paid 20 euros:rolleyes:) But it's great for keeping things hot (or cold) as well for upto three hours.
