English muffins, as Jinky67 says, are horrible.....but only if you don't toast them!
If you toast them lightly then they change completely.....I tend to add a thin slice of cheese when they are hot just toasted, and sandwich together. They are also lovely with jam if you like sweet toppings. Failing this, and if you really don't like them then grate in to crumbs and use wherever you'd use normal crumbs (cauli cheese, breaded fish etc).

Eggs Benedict is a firm favourite in our house.
Split the muffins, lightly toast and lightly butter, put on a slice of ham and a poached egg and cover with hollandaise sauce.

Well if you won't eat marmite
... eggs benedict is a good one
... scrambled eggs & smoked salmon
... poached egg, smoked haddock & spinach
... kippers & marmalade
... smoked mackeral & watercress (or horseradish)
... buttered with jam/honey/marmalade instead of crumpets or toast
and don't buy stuff just because it's on offer... you're only supposed to do that with things you [STRIKE]want[/STRIKE] need!0 -

Eggs benedict or florentine (spinach instead of ham) for lazy weekend brunches - when you have time to make hollandaise sauce and sit and enjoy it!
Otherwise, I love them lightly toasted, and filled with a slice of ham and a "microwave omlette" (scrambled egg in the microwave, but don't stir it, so it just becomes one large piece of cooked egg - holds its shape better and therefore sits in the muffin more easily!). Obviously, these should be eaten with a smidgeon of ketchup! :rotfl:

P.S. The mini pizza ideas work well, too...but I rarely have any muffins left after breakfast to do this with!! :rolleyes:0 -
I would also say mini pizza. We also like them split and toasted with butter and jam, liks a scone. Mmmmm eggs benedict! They're lovely as a sandwich with a bit of ham, salad and salad cream in too, I'd also recommend some lovely crispy bacon and cream cheese.
