    When I want my buttercream to look white rather than creamy I add a few drops of blue colouring this takes away the yellow of the butter. Don't overdo it though. I agree that butter cream is expensive to make but I would never ever use lard instead.

    are you sure its not violet? Violet cancels out yellow.

    blue, gives it that 'daz' white glow, so more of an icy crystal white effect, than a pure flat white

    Thanks, will try that. I use blue because it's easy to find but I will look out for some violet now.

  • Thanks Zippychick, I did look but obviously not hard enough :)

    For anyone who is interested or not as the case seems to be here :) on youtube there are many videos that show shortening lard/trex being used to make buttercream. Apparently it makes it creamier. I haven't tried it, not brave enough. I got some super white off ebay which does turns it totally white so you get a better colour when you add your paste colourings.

  • Quick update

    I went ahead and made 'buttercream' with Trex.

    It's actually really creamy and it tastes really good, and is a pure white.

    On the minus side if you don't have a full mixer system and only a hand mixer like me then it is very difficult to mix. You really need to be able to chuck it all in a bowl and let a machine do all the hard work, so I probably wont be making it again.

    can any one help with a recipe.

    i want to decorate my fairy cakes with butter icing/ butter cream unsure of excate name, when you use a piping bag and swirl it on the top.

    i thought it was simply butter, icing sugar and a bit of colour.

    but i've since look for recipes just to make sure and i've found them with cream cheese in , cream in, milk in. Oh my goodness :eek:

    if i make is simply with butter and icing sugar will they go terribly wrong ? help !!!

    ah, does it. thankyou for that. so do i just add a small amount until i get a nice texture. all the recipes i've found have been for quite big qty's.
