I'm about to get Mortgage Insurance - I want fully covered for my payments in any eventuality, would prefer someone who saw my medical records up front rather than make excuses not to pay later and want covered for life?

Permanent health insurance is underwritten at point of sale. That is the best form of income protection. However, it would have to expire (typically at age 60 to 65).
Getting covered for life is not going to be possible. Not unless you are talking about life assurance instead but even then, why would you want a whole of life policy to cover a fixed period debt?I am an Independent Financial Adviser (IFA).
