Bring back Kikkoman soy sauce

Options
Has anyone else had trouble getting hold of Kikkoman soy sauce?

The major 4 supermarkets aren't stocking this Delia cheat as they can't agree fair trading terms.

Tbh I don't care if the price has gone up, I just want me sauce back please.

Delia cheat? I didn't realise she defined 'cheat' as 'really expensive brand of a cheaply available ingredient'

    Now I know :)

What's the qualitative difference between Kikkoman-branded and generic? Is there a difference at all, aside from about £1.10 a bottle?

(if there's an answer here which is blatantly obvious to anyone who watched Delia's series, please don't flame me; I put my foot through the telly in an apoplectic rage after seeing her endorse the frozen mash and haven't been allowed to watch it again)

Wondered where it had gone; OH brought back some generic soy sauce and it just isn't the same. I'd been using it for years and other brands just don't pack the same punch; didn't realise Delia was the reason they have stopped stocking it....

I find it's one of those - yes it's more expensive but it tastes better and you have to use less - situations.

That's rather like saying "Isn't one bottle of white wine the same as the next bottle? They're all white wine"

There is a huge difference between soy sauces which you'd notice merely by tasting a few different types. At a base level it is soya beans mixed with a roasted grain, sugar, yeast and salt water. It's then left to ferment. However there are a lot of variations, for a start different manufacturers use different grains (wheat, barley or rice), then the quantities of the various ingredients change and the fermentation time also varies. In addition some are naturally brewed and some artifically brewed using soy protein that has colourants added.

Kikkoman is a naturally brewed soy sauce, but I've no idea why Delia favours it over other naturally brewed ones.

  • Chinese supermarkets and Costco sell huge bottles of Kikkoman for a reasonable price. I just keep refilling my little bottle from these.

I don't like Amoy soy sauce that much, there's something 'dusty' tasting about it to me.
