15 is a lot! I only use six on a very regular basis, not including black & white pepper ...

Fennel seeds
Chili flakes
Smoked sweet paprika
Cinnamon
I use a lot of garlic & ginger, and I grow rosemary, thyme, parsley & mint, so you could add those on, too, if they were dried! Also have lots & lots of condiments.0 -
15 isn't a lot!!

Japanese tagarashi seasoning

And yes I do use them all, some less than others but they do all get used.

I don't have a spice rack, I have the bottom shelf of a cupboard full of the stuff(and its spilling into the shelf above) I don't think 15 is a lot and I don't have dried basil, thyme or rosemary (the t&r are abundant in my garden, basil fresh on windowsill) I agree with Thriftlady-have most things whole and ground, it doesnt seem like a lot, just enough, only thing I consciously don't have is cloves, as I really cannot bear them! I just pile them on top of each other, oops0

I wish the drawer I keep mine in was a few cm deeper then I could stand them all in there upright and write thier names on the lids with a marker.0

I wish i had a drawer to keep them in! they are all so cluttered on top of each other I find myself emptying the cupboard to find the ones I want! grr to not having my dream massive expensive (expansive
) kitchen with space for everything.... Oh for a pan drawer that doesnt have 3 layers of 4 pans in it-how it still opens I don't know

I have a shelf dedicated to my spices and herbs, I couldn't just live with just 15, sorry - the only ones that I could live with out are the different salts - which I got giving off oh mam. Some are in the tubs until I collect more glasses to use (i get them cheap at in-door market)

I dry my own oregano, marjoram, thyme, bay and tarragon and keep a supply of coriander in the freezer and rosemary and mint live in the garden
I have all my spices decanted into small jars from Ikea and a few things like bouquet garni, black peppercorns, cardamon, cloves and herbe de provence.
Don't know how many that is. I'm sure I could live without them but it's nice to have them handy when a recipe calls for them. Not that I ever actually follow recipes.;):D
