Reply to vernall, sorry I only just noticed your question. I actually use a chicken stock cube but I'm sure a vegetable one would be good too. (I love Knorr stock cubes, I know they're a bit more expensive than some but they seem to improve everything I cook!) I don't drain off the cooking water, I use it in the soup, but I only use just enough water to cover the potatoes and onion.0

Perhaps this is the wrong place, but we love rosti! Unfortunately, the only recipes I've seen all involve frying to start, then putting the whole kit-n-caboodle in the oven but I don't have a pan to do that.
Any other ideas or suggestions please?Full time Carer for Mum; harassed mother of three;loving & loved by two 4-legged babies.
