Tinned Peaches

    This is a recipe that I've made once before and it was delicious.

    Quick Peach & Marscapone cake

    Preheat oven to 180 degrees. Grease and line a 24cm (9 inch) springform baking tin.


    Cake mix

    3/4 cup SR flour
    50g melted butter
    1 egg
    1/2 cup milk
    50g brown sugar

    topping
    1 tin peaches (drained - keep 3Tbsp of liquid)
    250g marscapone
    1/2 cup sugar
    1/4 tsp grated nutmeg
    1 Tbsp demerara sugar


    1 Put all of the cake mix ingredients in a bowl and beat until smooth. Pour into tin.
    2 Put marscapone, 1/2 cup of sugar and peach juice liquid into another bowl and beat until smooth.
    3 Place peaches on the cake mixture
    4 Spoon marscapone mixture over peaches. Start in the middle of the tin and leave a 1 inch border around the outside (mixture will spread during cooking)
    5 Sprinkle with demarara sugar and nutmeg
    6 Place into the oven for 35 mins approx. Leave to cool in the tin before serving.

    As an aside,i was looking for tinned fruit in small rip top tins for inclusion in lunch box. Why is it that the industry is hell bent on forcefeeding us what they call "syrup"? This is all part of the conspiracy to forcefeed us sugar and salt in various foods. I want tinned fruit in natural juices but it is thin on the ground.

  • Sorry to bring a really old thread back, but I have been trying to find some different tinned fruit recipes to jazz up puddings a bit where fresh fruit isn't possible. I think I'll have a go at making the tinned peach/sponge thing as it sounds great! I wonder if there's anything for tinned mango. :)

    I've never seen tinned mango :o I suspect anything that works for tinned peach will be just as good with mango.

  • I found a tin in Mr T and thought it might be useful. I've actually made a fairy cake/cupcake mixture with the mango slices blended to a puree in - we'll see how they turn out. :)
