I have some tinned peaches and would quite like to make a cake with them, is this possible with tinned peaches, does anyone have any good recipes for peach cake?

I have made a plain sponge before now and cut the top half of the sponge in half mixed chopped up peaches into some cream and then made a sort of giant butterfly cake - it was lush xBlessed are the cracked for they are the ones that let in the light

In the school kitchens (!) they just used to put the tinned peaches in the bottom of a tray/tin/dish and just put ordinary sponge mix on top. Add custard - lovely!Please do not quote spam as this enables it to 'live on' once the spam post is removed.

I haven't actually done this but this is what I'd do.
I would butter the base of a loose bottomed cake tin very, very generously, and by butter I mean butter;) I would then sprinkle a thick layer of soft brown sugar over it. Then I would place the drained peaches in the tin. Next I would mix up a basic sponge cake (3 eggs, 6oz each of self-raising flour, butter and sugar and 1½ tsp baking powder) and pour that over the peaches. Bake at 180c for about 25mins.
You should end up with a sticky, syrupy peachey topping.
BTW I would save the juice from the peaches to use in a jelly or to add to a muffin recipe as part of the liquid. You could make peach muffins of course;)

you can blitz the drained peaches into a sauce for serving over a cake making it into a pudding. You can heat this too and if it's a little too thick, add a bit of juice to thin it down.
Or, you can also mix it chilled with cream - either whipped to fill & /or cover cake or single to pour over
