Can I freeze parkin?

Now some may say I am wrong but I believe parkin is made with oatmeal. Without oatmeal it's ginger cake.
I remember my grandmother making parkin back in the 1940s. My grandfather always called it "farth cake" (yes, farth cake - it's not a typographical error). This was long before the days when us peasants had freezers. It was kept in an old biscuit tin and hidden away for a few weeks before eating.0 -
