Can I freeze parkin?

Love parkin and know you an keep it a week or so in a tin, but can I make it earlier and freeze it cut into peices for bonfire night?
Froze other types of cake, but never tried parkin lol.

Yes it freezes well. You can divide it into portions that are easy to lift out of the freezer one at a time.

Thanks for that Pink. Can I ask though, did you freeze it straight from cooking or leave it a few days to soften up and then freeze?

Also you can keep it for far longer than a week in a tin, my Grandmother (born in Yorkshire) always said you had to leave it for a few weeks to "come back" before eating it... I'm sure she used to leave it for about a month!0

Believe me, although my grandmother was only about 5' tall she could be very scary, and we wouldn't have dared touch the parkin before we had been given permission!0

Does anyone have a good parkin recipe ?

YORKSHIRE PARKIN
100g self raising flour
100g oatmeal
100g soft brown sugar
1tsp ground ginger
100g black treacle
50g butter
75ml milk
1 small egg
(I did half bkack treacle half golden syrup-depends how u like it-some people use all golden syrup)
Melt the treacle, butter and milk together until its smooth.
Add dry ingredients+egg..beat it all together
Put it in a tin
Put it in oven on 160 or gas 3. Cook for about 50 mins.

I know this is an old thread, but still relevant! Can I use normal porridge oats in place of oatmeal, if I whizz them up in a food processor first? TIA.

Umm i make parkin but I've never put oats in mine, i got the recipe from the BBC .
Does adding oats change the Texture?today's mood is brought to you by coffee, lack of sleep and idiots.
