Help! Deposit problems!

My girlfriend found a place to live on Gumtree (no agent) and paid a deposit (got a receipt) and lived there for 3 months.
The arrangement was just informal, no proper contract etc. Money was just paid once a month.
The ladylady/flatmate was very annoying and did the usual things of kept eating my gf's food and other generally selfish things. She was also an untrustworthy person, and never provided a bed for 2 weeks even though she said "i'll pick it up tomorrow.." after a lot of broken promises (many others which I won't go in to), my girlfriend had enough and gave 1 months notice. We knew she would be the type to not pay a deposit back so we asked her to count the deposit as the last months rent. The landlady/flatmate said the deposit was in her savings account (a lie) and that we shouldn't think she was so untrustworthy,
After that there was a big argument (obviously) and over the next few days the landlady told my gf to get out because someone else wanted to move in on Friday (was a lie). My gf rushed and found somewhere else to live and paid a deposit for the new place. We moved in today. We asked for the deposit back but she said "I have no money" and you did not give me 1 months notice (even though she was the one that kicked my gf out!)
We kept the keys until we got the deposit back, but after we handed over the keys and got the cheque as deposit, the landlady quickly drove off (never got out the car to start with) we noticed that the cheque was dated over 1 month later (postdated) and it was for the wrong amount (she took some off for a "stain")...
What can I do? I 100% expect this cheque to bounce.
The deposit was never held in any deposit scheme and I know she has been avoiding council tax and getting exemptions even though she is just a part time Student/not full time.
Any advice would be welcome...:s
