How long does jelly keep?

I've made up the jelly blocks with fruit in (not pineapple though as it contains enzymes which prevent the jelly from setting) and kept the made up product in the fridge in a pudding basin for several days, although it's generally finished off well before then!!
You could make up half a block at a time but if it's stored at the normal fridge temperature of below 5 degrees, I think you could probably make up and store at least three days' worth at one time in individual lidded containers. I've never tried freezing jelly. Why not have a trial run with one small lidded pot and let us know how it works out? If it works OK, you could take one out each morning and put them in a lunch box where they would serve as a cooling block to keep sandwiches fresh as they thaw through during the morning.
Incidentally one supplier of cream (I think it may be Sainsburys) have convenient plastic pots with lids, which allow the surrounding labels to be removed, providing nice plain inidividual containers for desserts. (I freeze individual portions of gooseberry fool, etc in them)0
