    for a 7th birthday cake, got lots of eggs and all other ingredients luckily. Anyone got a nice recipe that a 7 year old will like? She doesnt like chocolate cake :eek:

  • I want to make a 7" square sponge cake so that i can cut it up to make a postman pat van. I have a receipe that came with the book but when i tried it, it told me to cook it for 1.5 - 1.75 hours which after 1 hour was slightly burnt on the bottom and had spilled out over the sides so can anyone help me with a recipe that would be suitable. I need a dense cake i think so that it can hold the fondant icing that i am going to put on the top.

  • 4 Large Eggs
    8oz Sugar
    8oz Margarine
    12oz Self Raising Flour (you can use 16oz (1Pound) if you want a really firm cake.)
    Water- enough to make the mixture a "soft" consistency. (Don't use milk it can make a sponge cake "heavy")

    Oven 170o/ Gas 3

    Line the tin with greaseproof paper.
    Only fill the tin 2/3 full, to allow for rising.
    Check after 40 mins, but it may take an hour. If it starts to brown too much then cover the top of the cake with doubled greaseproof paper.
    All ovens vary, so don't worry if it takes longer than you think it should.

    Can anyone suggest a cake I can bake for our office raffle next week?
    I wanted to make something that would keep until Christmas and hopefully mature in time for then too. It's too late for a traditional Christmas cake and a Yule Log would be need to be eaten in a couple of days.
    I'm a fairly handy cake baker so fancy cake suggestions are fine, even preferred as I'd like to bake something a little special as it's to be a prize.
