    Here you go:

    1 head of garlic
    olive oil for brushing
    125g of ricotta cheese
    150ml (1/4 pint) low fat natural bio yogurt
    1 tablespoon of very finely chopped fresh chives
    freshly ground black pepper

    preheat oven at electric 200c (fan oven 180c)

    Brush whole head of garlic with olive oil and roast for 30 minutes. Test with sharp knife - the pulp should be soft - leave to cool.

    Divide into individual cloves, hold the pointy end and squeeze out the soft creamy flesh, then paste using pestle and mortar.

    Beat together the ricotta and yogurt, stir in garlic paste and chopped chives -black pepper to taste and chill.
