Does anyone have a recipe to make light wholemeal bread?
Mine always turns out like the loaf that kills the duck in 'About a boy'.
I bought some wholemeal bread flour on half price offer in Tesco and am keen to experiment.

My old man makes it 500g wholemeal and 250g white bread flour or even plain flour. It always turns out delish! He makes it by hand mind you!

OK Got it now.
Flour as above (total 750g), 1-2 teaspoons salt (depends if using stork or butter, if butter, only one) 1 sachet fast action yeast 25g butter/stork 450ml warm water.
He kneads for 10-15mins, and rests for about 30-40mins in the tin, then bakes.
No double knead, and it's yummy! Obviously, that fill a big 2lb tin, don't know your sizes!
And he uses the flour that you do, and last night's was with Tesco pink bag bread flour, he only uses plain if he doesn't have enough.

I made it the other day, absolutely gorgeous! Keeps fresh for a couple of days too and doesn't dry out. Will soon attempt with part wholemeal flour. Yum. I made some at 10pm one night , straight after watching the programme :rotfl:A little nonsense now and then is relished by the wisest men :cool:

I have the bread resting. what temperature do I bake it at and for how long?0

220 (we have a fan oven) or 230, for about half an hour. If you find it's going too brown stick some tin foil over the top. The crust is crusty when it comes out, if you prefer it softer, wrap it in a clean teatowel to cool. Does it look nice and fluffy? The rising time isn't rigid, if you want to leave it slightly longer, it won't do it any harm, and make sure you don't bang it about.
