How could I get cheap transport from Brighton arriving at Stansted at 5am ... ? I was thinking National Express

You could go by train, but it's much dearer.
You can buy NX tickets online through Quidco and get a 30p cashback.

Only other alternative is using Megabus for Brighton - Victoria CS and Terravision for Victoria CS - Stansted.
Megabus are £1.50+
Terravision are £8.10ish
So approx £10 in total, NX charge about £27 for a direct fare, those are both single fares, so cheaper but much less frequent.
Shame NX don't do Funfares except via London
