    Hi all, sorry it's been a while.

    Social services have given me another assessment and agreed to giving me 5 hours a week, it still needs to go to the decision makers though so keeping my fingers crossed.

    I've been doing well on the food front, just buying fruit, veg, milk and bread mainly, a couple of slips but things are going well. I haven't exactly been meal planning, just buying the veg and taking out what I fancy meat or fish wise from the freezer each day.

    Does anyone have any ideas for something quick and easy, or preferably in the slow cooker, to do with peanut butter and chicken?

    Look on your Council website, probably under the "Council & Councillors Information" section - you should be able to find out who is the Elected Member with responsibility for Adult & Social Care / Social Services. That is the person you need to write to.

    Your Council should have a procedure & timescale for responses to MP's - contact your MP's office to see if they have received a response.

    Good luck with your new assessment, and maybe your GP can chase up the OT appointment?

    I've had a letter from the OT department, they've got a long waiting list. I've got an appointment with the ME clinic though, so hopefully they'll be able to chase it up too.

    Thanks for the recipe, would it be ok to miss out the garlic and soy sauce, and change the chilli sauce for chili powder, and the cornflower for normal flour or something?

    Don't give up with the social services thing, I had to fight for my mum to get a stair lift, the OT said she could have a commode and sleep downstairs or we could pay for it ourselves. I walked her round the house and asked her to point out a suitable place to put a commode where it wouldn't be in full view of anyone passing and reluctantly she agreed if it was her Mum she wouldn't expect her to lose her dignity.

  • Hi I have osteo-arthritis and cannot stand for long periods so I have a tall stool in the kitchen that I use when I am peeling stuff or making up a cake mixture. I have always sat to do the ironing whillst watching the t.v..It is hard sometime to stop yourself when you see a bargain or something reduced, I know I am slowly working down my freezer so I can defrost it.It seems to take ages especially as I, like yourself, live alone.
    But it can be done ,I just only take out enough cash to buy whatever I really need ,milk ,bread fresh fruit and vegatables ect.I have got my weekly food allowance down to £30.00 and under from £50.00 just by being strict with myself.Go on the GC challenge for a month and see how you do.We're a great bunch on there, and give each other lots of support.

    Hi Ames! I was thinking about you the past few days and was going to look up your thread and see if you were still about. Nice to hear back from you :j

    Im sure you could surely miss out the soy and garlic. If you are also missing out the chilli sauce, this means your liquid content goes down a little, so if it was me , i would put the equivalent in of water. Just to ensure there is enough cooking liquid (you don't need a lot for SC but do need some). Again this may not be necessary, but I would do it being cautious. The chicken will produce it's own juices when cooking, especially being on the bone.

    The cornflour at the end and the high temp will be to thicken the juices I imagine so you could try normal flour mixed with a little water - just like a cornflour paste, only a normal flour paste. If you still need to thicken the liquid, I found you an old thread out with thickening tips - how to thicken in SC

    Keep chasing up those OH people, and good luck with the ME clinic. When is your appointment?

    Great news on sticking to the plan (apart from a few slip ups - hey, none of us perfect. I had a takeaway tonight, but don't tell!)

    Meal planning works for alot but not for everyone. I don't actually meal plan. I do it like yourself day by day. I would meal plan batch cooking - so I plan to make a big batch of X then buy the ingredients in , but apart from that I forage from what I have and buy whoopsies. It works for me , and that's the main thing - finding what works for you.

  • Have you made jamaican jerk chicken?

    I noticed from your list that you had chicken and the spices-if you haven't it's really easy! Just drizzle a little lime juice on the chicken (my recipe says to marinade it in lime juice but i find just drzzling is just as nice), mix some of the spice with some oil to make a paste and spread on the chicken, leave in fridge to marinate for a couple of hours (at least, overnight is good) bung it in the oven until the chicken is cooked and cook some rice to go with it.

    Minimal prep and tasty meal.

    If you have the energy and a food processor you could try making your own hummous using a tin of chick peas. There are loads of recipes here.

    If you want to stick to the authentic recipe but are having trouble finding tahini you can usually get it in heath food shops. It is expensive, but a little goes a long way and it will keep OK in the fridge once opened.

    Thanks everyone.

    I remembered last night that my sister had left a tray of med veg for me at her place (she's living in Skegness now but keeps coming back to sort her old flat so she can find someone to take over the lease) so I decided to do the chicken with that in the slow cooker. But when I went to pick it up today there was only half of it left! So I popped into the co-op for a couple of things to add to it, and got a load of reduced fruit too.

    So, in my slow cooker now is: half a tray of roast med veg, a chopped yellow pepper, chicken, a tub of cherry tomatoes, a courgette, some potatoes, some veg stock and some fresh rosemary. Hopefully it'll turn out ok, cos I'm using my big SC for the first time and hoping I'll have enough to freeze a couple of portions!

    Fluffybunnies, I like your idea for jerk chicken. I've tried using the spices just poured on and rubbed into meat, but it's a bit patchy - some bits are really strong then others are almost bare. I'll give the paste a go next time I try it.
