Debt and court claim

I have found this forum after doing some searches for info and wonder if you could help me. I am chasing 3 or 4 old debts which I am owed from many months ago and have written to the debtors on several occasions, lastly with a pay up or go to court. I am now at the point of taking people to court but want to know the following which I haven't been able to find out on the net:
1. I claim for the amount owed, interest and court fees. What happens if the debtor turns round and just pays the original amount? If I still persue them for the interest and fees will the court expect that or will they think I am being OTT and I should be happy that I got them to pay up.
2. The terms on the invoice has a monthly interest rate and some fees. Am I allowed to claim this or will the court expect the statutory interest rate?
