I don't have an ipod (shock, horror) but use my Nokia 6600 slide as a music player.
Can I use itunes to manage my music?
Can I just transfer straight from itunes to my phone?
If I buy music through itunes will it be compatible with my phone (I'm sure I remember something about anything bought through itunes being protected so that you can only put it on a ipod)?

If you can drag and drop music to your phone, you should be able to drag music from iTunes onto it. You'll need to open iTunes, and then open a window with your phone's contents in it to drag from one to the other.
Music from the iTunes Store is not protected. It comes in the AAC file format which your phone appears to support, so there's nothing stopping you purchasing music in iTunes.0 -
