Hi, well today I've kinda had two meals out of one !! after I'd peeled the potatoes for dinner I dried off the peeled skins mixed them with a little oil and salt and popped them in the oven for 20 mins I served them with a little salad and some ketchup mayo and that was our lunch !!! I dont know why I've never done this before I always just throw the peelings out but glad I didnt today as it was absolutly delish !!!!
The last time I ever peeled any potatoes was many years ago - when I automatically peeled the potatoes we were all having for a meal (when I was staying in a commune for a few days with some friends) and a housemate promptly grabbed the potato peelings and fried them up and ate them - expressing horror at me for wasting food. I've never peeled a potato since.....0 -
i tend to have the 'free' meals in our house, the main one i love is left over vegetables and mashed potatoes from a sunday dinner, and save a bit of the gravy, if not juset use some gravy granules, i put it all into a big bowl...ans mash it all up,:D and its scrummy...
i will even do it with the left over veg from the plates:cool: i did mention this a few years back on a thread, and got jumped on from the 'germ brigade' but it is only from my family plates....and as i told them i am sure i have had worst things in my mouth:rolleyes:Work to live= not live to work0 -
Wow, we really all are very good at using up odds and ends aren't we.My DD's have called me Frau Frugal for most of their lives, but as I always say don't knock it until you've tried it. Risotto is an excellent way and I loved Libbyloos spud peelings they sound right up my street,although its only the 'old' spuds that I peel the new ones get cooked with their coats on:D
If I've been tempted to bin something my late dear old Mums words come to mind from over 60 years ago 'If you throw food out you are feeding the devil' plus of course in those days every scrap was utilised.She also said 'Men( merchant seamen) have died to get food to this country to throw it away you are dishonouring them' True this sentiment isn't the same today but I think of the millions who are starving who would gladly eat the stuff that is binned daily in this country. Perhaps in the Goverments green ideas they could incorporate the ideas of the war years more into peoples mindset, that to throw away good food is not only wasteful any just filling up our precious landfill .0 -
I freeze as much as possible of what gets brought into this house nowadays and will only defrost what I know we will use there and then.
Absolutely NOTHING gets defrosted if there's 'fresh stuff' in the fridge to be used! I may have found this harder to do if I was still with my ex-OH and my kids were still small. But, as I left 'the ex' years ago (and my kids all have their own homes and families to keep track of), I am now in complete control of what gets served in my house; 'current-OH' can like it or lump it!
Re-reading all that makes me sound terribly 'harsh' - I'm not quite as bad as that- I DO take OH's likes into account - just don't allow them to dominate the household in the same way that 'the ex' did in the past.

My daughters favourite lunch is whan I have a little left over mince from spag bol/lasagne. I make I toast bread on both sides, spread a little bit of the mince mixture on the toast, top with chedder cheese and put under grill for a few mins. I made it once on ciabatta bread with a couple meatballs in tomato sauce left over from the night before, just slice them up.0

Mmmm lettuce soup is delish and how about cucumber soup? I must admit, I have never tried that myself. All the lurky bits of veg get hurled into my fridge bottom soup, whatever they may be.
Through the summer when fresh salad leaves are flourishing in the garden we don't eat so much soup so all the left over veg I had saved for this purpose was taking over the freezer.
Last week when I was busy out and about with the DGK's I got a selection of these little boxes out and microwaved them up to make instant dinners along with whatever we had i.e. hm 'ready' cottage pie and on another occasion cold meat sliced into gravy.
Once upon a time when I had 'posh' visitors on a Sunday I used to sling whatever was left in the tureens thinking 'if they had eaten it up, it would be gone', but not now, everything gets frozen away as I have visitors again on a Monday and can't use it up immediately.

Bella, on the grounds that having visitors is more work, I always do extra so that I get the day off the next day. Fortunately the dh and kids like a 'bit of this' and a 'bit of that' so it's seen as a treat and not a chore to do. Esp as we tend to have things that are a bit special or take time to do when we have visitors.
Waiting for parcel so we can go to Cheshire Oaks! DOn't want to go up and get dressed etc and miss postie, so waiting for dd to appear and be downstairs while I go up. I use up loads of bits & pieces in pasta bakes which then go in the freezer for meals later in the month. Surprising how nice they are & every one comes out different depending on what you've got. I sometimes make individual ones too so they can be taken to work for hot lunches during winter.2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever

I have two baby grandkids - ALL leftovers from meals (including curries which i make milder for them by adding yogurt) are mashed up thoroughly or blitzed with stick blender when babies were tiny, and divided up into one portion freezer bags. These are then frozen and given to the (very) grateful mums who then have a supply of home-made baby food in the freezer!0
