Minimum Sky Package with Sky Sports

Hi,
My dad, who is approaching 80, is moving from a Telewest area to one that doesn't have cable. He loves his Sky Sports and Prem Plus (and also AtTheRaces) he has this with Telewest along with just has the basic Freeview channels - so he pays 20-25 pound a month.
When he moves he is going to have to get Sky proper for the Sky Sports\Prem Plus etc but they then seem to insist on you picking 3 "Packages" full of channels he has no interest in which will mean that he pays much more in total than with Telewest.
I have never dealt with Sky and I was hoping someone would give me an idea how we could subscribe to the minimum number of channels but also get all the mentioned Sports channels for the cheapest price. I was thinking of him getting the Sky Freesat for the one-off £150 and then just subscribing to Sky Sports etc as required - would that work?
Any advice would be appreciated.
