Carrot and Parsnip ideas?

My DH loves Parsnip and Apple soup, but as others have said you can roast them in the oven with a drizzle of olive oil and a couple of cloves of garlic or try honey instead - lovelyBlessed are the cracked for they are the ones that let in the light

Well, I went for this idea and they were fantastic!
I sprinkled them with Puzta spice mix from Lidl and a bit of ground sea salt whilst frying them in a tiny bit of oil and they were lovely, didn't taste at all like parsnips, more like bits of potato.
I will def be cooking them again like this, thanks for the tip.
