Carrot and Parsnip ideas?

I'm cooking a sausage casserole in the slow cooker and was wondering what I can do with the bag of sweet parsnips and carrots that I have in the fridge.

Can anyone suggest anything that doesn't include a lot of fat please?

I have used them mashed together in the past but was wondering if any other members could give me any ideas please.

I normally put some in the casserole but I am using a bean recipe at the minute.

    Roast them with just a spray of olive oil and some herbs, garlic or sesame seeds sprinkled on them, whatever takes your fancy.

    Or you could make a version of game chips with them, slice thinly and bake with tiny bit of oil, nice and crispy with casserole.

  • You can roast them without using too much fat. I use spray olive oil and some seasoning.

    Oh i really fancy some roast parsnips now - I haven't had any since last winter!

    Thanks Mummysaver, I may try that next time I have the oven on.

    As I am using the slow cooker I don't want to use the main oven just for that, it flippin' cost too much to use the oven (it's not the best, was in the house when we bought it and because it was nice and clean we kept it, but I think it has seen better days).

    another vote for roasting, one of the very few ways I eat carrots (unless disguised in a soup!) A little bit of rosemary and garlic on them too.

  • Another fan roast carrots and parsnips....I parboil them, got a little oil hot in the oven and throw in with S&P and herbs. I like some chilli (either dried or fresh) thrown in too.

    Or grate the carrots up and use them in a carrot cake and mash the parsnips in with potatoes...mmmmm!

    Just seen you don't want the oven on, sorry. You can cut them into thin strips and cook them on the hob on a v low heat with some herbs (tarragon is nice) and a wee bit of sugar and water.

    Spicy parnsip soup? Nice with warm flavours like cumin (gazillions of recipes if you google).
    Carrot and coriander / carrot and orange soup?

    God I'm starving....

    Making some soup as a starter might be nice (especially on a night like this) if you don't want to use the oven? Just grate them instead of cutting to make it cook quicker.

    You can stir fry them if you do them in strips, I do sprouts and parsnips like that in winter for a change. Carrots and parsnips go sort of caramelised when you do it, very nice! Just make sure you cut them quite thinly but not too thinly, julienned!
