    Are you using fresh ingredients?.

If any of them are stale particularly the Yeast you will get those sorts of problems.
I used to be indecisive but now I am not sure.

Yeast will go off even in an unopened packet.

We only make the 70% Wholemeal loaf ourselves but leave out the milk powder ( OH likes a crusty loaf) and sugar ( Diabetic ) also Lidls olive oil instead of butter. We are on the thirty fifth loaf with the Panasonic and all perfect.

The recipe asks for 25g of butter, we add 25g of Olive oil to the flour while the container is still on the scales. (No messy spoon to clean).

Just a thought. Don't forget to add the crushed Vitamin C tablet ( Lidls again )

You could always try the Rapid White loaf 1hr 55 mins recipe. I used to use the long hour recipes for brown and wholemeal but now I just do the rapid bakes and they turn out just as yummy.

I agree, yeast is pretty temperamental and needs to be really, really fresh.

Hi my first thought was the yeast. I didn't realise that you had to store it in the fridge. Good luck with your next loaf.
