Cheap Pasta / Rice Meals?

    Have a look at the slimming world support thread. There are loads of pasta and rice recipes as these are "free" foods on the SW plan!

  • Spicy rice is my fave:
    1 onion finely chopped
    4 cloves of garlic chopped
    1 or 2 green chillies chopped
    2 teaspoons cumin seeds
    2 teaspoons coriander seeds
    2 teaspoons fennel seeds
    4 cloves
    4 green cardamons
    1 teapsoon turmeric powder
    Optional eggs

    Soft fry the onions, garlic and chillies, then add all the seeds and turmeric, fry for around 3 mins then add a cup of rice and a cup and a half of water. mix well and boil. Put a lid on the pan and simmer on a low heat for ten mins. After ten mins switch and leave standing covered for another ten mins. Meanwhile poach an egg or two and pop on top of the rice when you serve it. This rice is also great the day after for a cold lunch as the amounts above make enough for 2
  • Boil up your fave pasta and meanwhile chop an onion,two cloves of garlic and and saute in oil.
    Add chopped bacon/pancetta ,sliced mushrooms,2 dry bayleaf and sprinkle of dried chilli seeds.
    Salt and black pepper.
    Serve and drizzle over some olive oil and eat :)
  • Hi , just thought if you could make tuna pasta bake too. Fry onions in oil add herbs s+p etc, i usually add veg stock cube too, add tuna, fry for five minutes. Add 3/4 of the can of canned condensed soup eg campbells mushroom is good for this. Add the cooked pasta and combine thoroughly then transfer to ovenproof dish,. Top with rest of soup thinly spread out and add grated cheese. Bung in oven for 25 mins at 180 celcius and brown top. This is so easy when youve been out all day and need something filling and hot. You can add sweetcorn to fish mix and i also finely grate courgette and carrot to the mix, to disguise vegetables from the kids.

    Bacon? Chicken? Prawns? Cheese? Chorizo? Sweetcorn? Courgette?

    Some people have a funny understanding of 'cheap' or 'just what's in my cupboard'.
  • macaroni cheese - just add grated cheese to cooked macaroni (obvious I know!) with a squirt of tomato sauce, lovely comfort food


    Add to this rice and peas and you've got yourself a jamaican feast -

    rice and pea

    1/4 cup coconut milk added to rice halfway through boiling, along with an oxo cube disintigrated in a little water.

    fry gungo peas/kidney beans'blackeyed beans (whatever youve got basically) for a few minutes and add to rice, then stir sand serve... easy.

    oh and for real mse if you use powdered coconut milk and dried beans its DIRT cheap.

    Chicken & rice is something I make quite often as its one the family all enjoy.

    Brown chicken/onion/garlic/five spice then add the uncooked rice and some stock and cook it altogether before adding sweet chilli sauce to taste. Quantities are dependant on how many you are feeding but it does make a little chicken go a long way and can be bulked out some more with some frozen veg. Very tasty!!

    And if you are really at the bare bones of the budget. Rice and bisto chip shop curry sauce from the 99p shop. :D One of my guilty pleasures. :D

  • We just had pasta bake for tea. Fried up 2 onions, a reduced courgette, 1 carrot (I put this in the micro for a minute before frying) Some chopped pepper from the freezer (also reduced) a small tin of sweetcorn. A tin of basic tomatoes (chopped by me) and half a jar of tomato sauce I had leftover. Sweat it all down till nice and thick and a good red colour. Stir in the cooked pasta. Put some grated cheese on top and brown under the grill. The kids get their veg, it tasted nice and there is enough leftover for tomorrow.
