    Nigellas Sticky Toffee pudding, luxury apple crumble with mincemeat in the fruit and almonds etc in the top and usually another choice as we have probably 14 for dinner. We might also go for hot gooey chocolate pots served with home made ice cream.

    Well better go as I get weighed in at my slimming world class this morning!!!! That really is the truth how have I managed to loose 4.5st!!!

    Mmmmmmm loads of lovely ideas here. We're normally at my parents and we're normally full by dessert, so our Christmas lunch goes like this:

    Starter - smoked salmon, prawns
    Main - Roast Chicken & all the trimmings
    Dessert - Xmas Pud, Xmas cake or chocolate pudding.

    However, when I was younger and I didn't like Xmas pud or cake, we used to do a chocoalte biscuit cake in the shape of an upside down glass bowl, then we would decorate it with chocoalte chips, and melted white chocolate over the top (or icing) witha sprig of holly. Non christmas pud christmas pud!! Was great!

    We're at the inlaws this year, so not sure what we'll be having except that the main will probably be turkey crown and beef!!

    Oooo - Delia's sticky toffee puds are GREAT. Especially as you can make the cakes and they can be frozen until the day, then defrosted, stuck in oven, sauce made, dolloped over, and stuck under gril for a few minutes for the sauce to bubble! It's in her Christmas book I think!

  • I made truffles last year, they went down a treat! I did a dry run a week before and found they were delicious! I made these ones

    Biggest word of advice, leave the chocolate and dulce de leche caramel in the freezer for as long as you can! And wear gloves whilst rolling them! I put coconut on the outside too so they were like snowballs, did a mix of truffles and they went down a treat :)

    I thought I'd include the recipes for the fennel and orange salad and the eggnog cheesecake in case anyone wants them:

    Fennel and Orange salad


    INGREDIENTS

    1 bulb fennel, trimmed and sliced
    2 large oranges, sliced into rounds
    1 tablespoon olive oil
    1 tablespoon red wine vinegar
    1 teaspoon poppy seeds
    salt to taste
    2 bunches rocket - rinsed, dried and chopped
    Dried cranberries

    Place the fennel and orange in a large bowl. Drizzle with olive oil and vinegar; sprinkle with poppyseeds and salt. Chill and serve over a bed of rocket sprinkled with cranberries.

    Eggnog Cheesecake



    1/2 cup digestive crumbs

    1 tablespoon white sugar

    1.5 tablespoons melted butter

    1.5 (8 ounce) packages cream cheese, softened

    1/2 cup white sugar

    1.5 tablespoons all-purpose flour

    1/2 cup eggnog

    1 egg

    1 tablespoons rum

    1/2 pinch ground nutmeg


    1. Preheat oven to 325 degrees F (165 degrees C).
    2. In a medium bowl combine biscuit crumbs, 2 tablespoons sugar and butter. Press into the bottom of a 9 inch spring form pan.
    3. Bake in preheated oven for 10 minutes. Place on a wire rack to cool.
    4. Preheat oven to 425 degrees F (220 degrees C).
    5. In a food processor combine cream cheese, 1 cup sugar, flour and eggnog; process until smooth. Blend in eggs, rum and nutmeg. Pour mixture into cooled crust.
    6. Bake in preheated oven for 10 minutes.
    7. Reduce heat to 250 and bake for 45 minutes, or until center of cake is barely firm to the touch. Remove from the oven and immediately loosen cake from rim. Let cake cool completely before removing the rim.
    Om nom nom.

    I made a choc mousse for my daughter last year and put it into a little espresso cup and saucer I got from wilkes for about a pound. She was SO impressed! felt all grown up :D
