I only have a small freezer ... I'd love a tall free standing one or a chest freezer :j

Once I can afford a food processor I will start saving the crusts :)

I have started batch cooking this week ready for me going back to work next week :) ... I've taken on another role at work as well as my normal role which is almost double the amount of work (for no extra pay  ) so need meals I can pull out and cook :)

So far I have made and froze:

    2 lasagnes
    2 batches of chilli
    2 batches of bolognaise
2 batches of butternut squash and sweet potato soup
    1 chocolate bread pudding
1 victoria sponge cake (sliced ready for lunch boxes)
Vienese jam swirls (for lunch boxes)

Tonight and tomorrow I'll be making:

    2 loads of pizza dough
    2 batches of macaroni cheese
    stilton and onion soup
    cookies

Whenever I'm donated something like a wedge of stilton I usually turn it into a cheese sauce to freeze, I also freeze any left over red wine and use in casseroles and bolognaises :) I also make up a weeks worth of sandwiches on a Sunday and freeze those so I'm not up late making them each night as I always take work home

Sort of looking forward to the colder weather so I can use my slow cooker when out at work :)

I have never frozen any veg peels before (will now though!) but I do make a soup from them every now and then. Got the idea from Shirley Goodes book "The Goode Kitchen" and her recipe for Paupers Pottage she used celery stumps, cabbage stump, tops and tails of scrubbed carrots, and potato peelings. You just cook them up with some chopped onions in about 1 + 1/2 pints of stock until soft, then blend and season.

Wow Burp! I am very impressed with your batch cooking!

I am eating some of my friends home baked coffee cake that she gave me last month! we couldn't do justice to the whole cake so froze it into portions for treats later on!

esmf73 - I am having a duh! moment - I get through so many mullerlight yogs that why didn't I think about reusing the pots!!!!!!!!

Mind you - today's one was "recycled" by my chocolate lab - Millie- who decided to lick it out and then shred it!

I love the idea of turning peelings into something useful - I used mine to make a vegetable stock - but you have all inspired me to be more adventerous.

I am trying to work towards a "takeaway" drawer or two in my freezer with instant meals to pull out when work gets in the way.
